Kheer can be made for any festival or celebration or also as a sweet dessert which you can serve after meals. This is quick and easy recipe for any festive occasion at home.

Serves: 4
Ingredients:
- Rice (Basmati) - 1/4 cup
- Whole Milk - 5 cup
- Sugar - 1/4 cup (adjust to taste)
- Cardamom powder - 1/8 teaspoon
- Cashews (chopped) - 12-15
- Almonds (sliced) - 10-12 (optional)
- Raisins - 2 tablespoon
- Saffron - 5-6 strands (optional)
- Pistachio - 2 tbsp (optional)
Method:
1. Rinse the basmati rice changing water until the water appears clear and keep it aside.
2. Boil the milk in a heavy bottomed pan. Add rice and reduce heat.
3. Keep stirring occasionally and make sure it does not burn at the bottom.
4. Add sugar, saffron and cardamom powder.
5. Cook stirring occasionally until the rice is tender or cooked completely and the milk is creamy and reduced to about half.
6. When milk is thickened and reached to the desired consistency add cashews, almonds, pistachios and raisins. Mix it well and let simmer for a few more minutes. (As kheer cools of it will become thicker in texture.)
7. Turn off the heat.
8. Serve hot or cold.
