Poori Recipe or Puri Recipe

Poori recipe or Puri recipe with step by step photo - Poori or Puri is very popular an Indian unleavened bread. Puri is deep fried puffed bread made from whole wheat flour, made during festivals or special occasions. Especially popular in children. Poories are often had for breakfast. Although, you can prepare pooris for lunch or any time of the day. Poori is very versatile that it can be paired with a curry or a sautéed veggie dish.





Ingredients:

For Dough:
  • Whole wheat flour – 1 cup
  • Salt - to taste (If you are making it for fasting then skip salt)
  • Ghee - 2 tbsp
  • Water (lukewarm) - as needed for dough (approx 1/3 cup)
  • Oil - to deep fry

Method:

To Make Dough:

1. In a big bowl mix the flour, salt and ghee.

2. Add water slowly, mixing with your fingers knead the dough.

3. Dough should not be soft but a little stiff and tight.

4. Cover the dough and let it set aside for at least fifteen minutes.

To make the Puri:

1. Take the dough and knead it for a minute. Divide the dough in eight equal parts. Form these into smooth balls, rolling the dough between your greased palms.

2. Take one part of the dough and flatten it by pressing in the middle. Roll the puri, slowly flatten them into about three inches in diameter. If the dough sticks to the rolling pin or rolling surface, put a drop of oil on the rolling pin and on the rolling surface.

3. Do not roll all the puris at once, as they will dry out and fail to puff. Roll four or five puris before you start frying

4. Heat the oil in frying pan over medium heat frying pan should have about one inch of oil. To check if oil is ready put a little piece of dough in the oil. Dough should sizzle, and come up very slow.

5. Fry them on medium-low heat. Place one puri at a time in the frying pan and press it with a skimmer. After they start to puff, slowly turn them over. Fry until golden-brown on both sides.

6. Drain on paper tissue absorbent paper.

7. Serve hot with Dum aloo, Kheer and Rasgulla.
