It purely depends on your choice of colorful veggies. This classic dish is a favorite of everyone. The crunchy and delicious taste of these rolls makes it perfect. It is always better to cut the Spring Rolls before serving because it helps the insides cool and avoids the spilling of shredded veggies when you bite into it. These spring rolls make a great starter/appetizer for any party. Spring rolls goes well with noodles and soup. Just follow these steps to prepare crispy, crunchy, fresh and tasty spring rolls at home.

Ingredients:
- Spring roll wrappers - 10 (you can get spring roll wrappers from any supermarkets. I have used store brought sheets)
- Cabbage (shredded) - 1/2 small
- Carrot (thinly sliced) - 1/4 cup
- Green capsicum / bell peppers (thinly sliced) - 1 medium
- Onion (sliced) - 1 medium
- Ginger (chopped) - 1 teaspoon
- Garlic (chopped) - 1 tsp
- Pepper powder - 1/2 teaspoon
- Soya sauce - 1 tbsp
- Salt - to taste
- Spring onion green - 1 tbsp
- Oil - 2 tbsp for vegetable + for deep fry
- All purpose flour (Maida) - 1 tbsp (mix with 2 tbsp of water and make a good paste)
Method:
1. For the stuffing heat 2 tbsp oil in a non stick wok. Add ginger and garlic and sauté for few seconds.
2. Add onion, cabbage, capsicum, carrots and fry till they are soften. Add salt, pepper powder and soya sauce. Mix well. Add spring onion green and mix well. Switch off the flame. Keep it aside.
3. Spread the spring roll wrapper on work top. Divide the stuffing into 10 portions. Take one sheet and place 1 portion of vegetable stuffing little above one corner (as shown in pic). Take the corner and roll till the center of it (as shown in the pic) and fold the 2 ends. Apply the flour paste around the rest of the sheet (shown in the pic) Roll completely and seal all the sides.
4. Repeat the process till all the spring rolls are done.
5. Heat sufficient oil in a pan. Gently slide 2 spring rolls at a time into the hot oil and deep fry on medium heat till they are golden and crisp. Drain on absorbent paper. Cut into pieces.
6. Serve hot with tomato ketchup or schezwan sauce.
