Egg Bhurji Indian Scrambled Egg Recipe

Egg Bhurji (Indian Scrambled Egg) Recipe - Egg Bhurji is an easy, quick and delicious Indian style scrambled egg recipe.  Egg Bhurji is great for days when your refrigerator has no vegetables in it or you are just too tired to cook and need something quick. This is a spiced up version of scrambled eggs with onions, tomatoes, capsicum and some spice powders. It can be served at breakfast, lunch or dinner.  Egg Bhurji is fantastic for any time of the day.

Preparation time:  5 Minutes
Cooking time: 10 Minutes
Serves: 2

Ingredients:

  • Eggs – 4 
  • Oil – 1 tbsp
  • Onion (finely chopped) – 1 medium 
  • Ginger (finely chopped) – 1/2 tsp 
  • Green Chilies (chopped) – 2
  • Tomato – 1/4 medium
  • Bell pepper/Capsicum (chopped) – 1/2
  • Cilantro (finely chopped) - 2 tbsp
  • Cumin powder – 1/4 tsp 
  • Coriander powder – 1/4 tsp
  • Black pepper powder - 1/8 tsp
  • Garam masala powder – 1/2 tsp
  • Turmeric powder - a pinch (optional)
  • Red chili powder – to taste
  • Salt – to taste


Method:

1. Break eggs into a bowl and beat it, keep aside.

2. Heat oil in a pan. Add ginger and green chilies and sauté for 30 seconds.

3. Add chopped onions and fry till light brown.

4. Add chopped tomatoes and fry until they turn mushy and then oil begins to separate. Now add bell pepper and fry for 2 to 3 minutes or till they are partially soft.

5. Add salt, red chili powder, turmeric powder, cumin powder, black pepper powder, coriander powder and garam masala powder. Stir well.

6. Now add the beaten eggs. Stir continuously to prevent burning. Lower the heat and cook till almost dry.

7. Turn off the heat. Garnish with cilantro/coriander leaves.

8. Serve hot with Roti, Chapatis, Naan, Parathas or Bread/Pav.
