Rava Upma is a popular breakfast dish in India. Originally from South India. This breakfast recipe is made from samolina/rava/suji, onion, green chilies and vegetables. This tasty dish can be eaten for breakfast, brunch or as a snack. It is extremely soft and spongy in texture. Rava upma is healthy, easy and delicious.

Ingredients:
- Rava (Sooji/Semolina) - 1 cup
- Mustard Seeds - 1/4 teaspoon
- Chana Dal (optional) - 1 teaspoon
- Urad Dal (black lentils) (optional) - 1 teaspoon
- Asafetida (hing ) - a pinch
- Turmeric powder- a pinch
- Curry Leaves - 4-5 leaves
- Onion (finely chopped) - 1 medium
- Cumin seeds - 1/4 teaspoon
- Green Chilli (chopped) - 2
- Carrot (finely chopped) - 1 medium
- Green peas - 1/4 cup
- Green Capsicum (finely chopped) - 1/2 medium
- Tomato (finely chopped) - 1 medium
- Cashew Nuts (fried) (optional) - 4-5
- Coriander Leaves (finally chopped) - 1 tbsp
- Lemon Juice - 1 teaspoon
- Salt - to taste
- Ghee (Clarified Butter) - 1 tbsp
- Cooking Oil - 2 tbsp
- Hot water - 2-1/2 cup
Method:
1. Heat 1 tablespoon ghee in a heavy pan. Add rava in it. Roast it on low flame until it turns light brown, approx 4-5 minutes, Keep stirring continuously. Once the rava becomes fragrant and starts to look dry and crisp, then switch off the flame and transfer roasted rava in a plate and keep aside.
2. Heat 2 tablespoons oil in same pan and add mustard seeds and cumin seeds When they sputter, add chana dal, urad dal, asafetida and curry leaves. Cook until dal turn light brown.
3. Add grated ginger, chopped green chilies, chopped onion and sauté on medium heat for 1-2 minutes until onion becomes translucent.
4. Add chopped carrot, green peas, chopped capsicum, chopped tomatoes, turmeric powder and salt. Mix well and sauté for another 2-3 minutes.
5. Add roasted rava and sauté on a low flame for another 1-2 minutes.
6. Add hot water stir continuously to avoid lumps and cook until mixture turns thick. It will take around 5-6 minutes. Add fried cashews and lemon juice.
