Lauki Thepla Recipe with step by step photo - Lauki is also known as bottle gourd, calabash gourd, opo squash, doodhi and ghiya. Lauki is excellent and nutritious food which promotes weight loss, helps in digestion, good for diabetics, helps to improve skin and enhances beauty. Lauki Thepla is a traditional Gujarati recipe of bottle guard whole wheat flat bread with some Indian spices. Lauki Thepla is easy to make for a healthy breakfast or brunch. They remain soft and so go well in lunch boxes or as picnic food. They also make a great travelling snack, as they stay well for a couple of days without refrigeration. You'll be amazed at how easily this traditional healthy Gujarati dish can be made at home.






Ingredients:
  • Wheat flour – 2 cup
  • Gram flour – 1/4 cup
  • Lauki/bottle guard (grated) - 1 1/2 cup
  • Curd (yogurt) – 2 tbsp
  • Ginger paste – 1/2 tsp
  • Cumin seeds – 1/2 tsp
  • Roasted cumin powder – 1/2 tsp
  • Carom seeds – 1/2 tsp
  • Onion seeds – 1/2 tsp
  • Coriander powder – 1/2 tsp
  • Red chili powder 1/2 tsp
  • Chaat Masala – 1/2 tsp
  • Black salt – 1/2 tsp
  • Turmeric Powder – 1/4 tsp
  • Asafetida (Hing) – a pinch
  • Green chili (chopped) – 2-3
  • Coriander leaves (chopped) – 2 tbsp
  • Olive oil – 2 tbsp
  • Salt – to taste
  • Water – as required
Other Ingredients:
  • Whole wheat flour - for rolling
  • Ghee or oil - 4 tbsp (for greasing & cooking)
  • Green chutney - for serving

Method:

1. Wash, Peel, and Grate the lauki/doodhi/bottle gourd. Keep it aside.

2. In a mixing bowl take wheat flour and gram flour. Add all dry spices and 2 tbsp olive oil into it. Mix well.

3. Add green chili and coriander leaves. Add grated lauki into it and Mix it well.

4. Add 2 tbsp curd, mix and begin to knead into dough. Add little water if required for kneading. (Be careful with the water as Doodhi has lot of moisture and usually you will not need extra water to knead the dough)

5. Make smooth soft dough.

6. Take small lemon size portion from the dough and make ball out of it.

7. Dust it with flour and roll it into a thin round shape (around 7 to 8 inches in diameter).

8. Heat a tawa (griddle) on medium flame, place thepla on it and cook for 1 minute. Turn it and grease ghee or oil on it and shallow fry. Turn it and again grease ghee or oil on other side. Cook on low heat till golden brown on both sides. Remove from tawa.

9. Repeat this process with the remaining dough for all the thepla.

10. Serve it hot with curd, pickle, and sauce or cilantro chutney.
